FEEDIN’ EDEN: BREAKFAST COOKIES

I might have to start combining my Feedin’ Eden and Ezra Eats posts now that he eats most solids. This is definitely a recipe for both of them. We always run around like crazy in the mornings trying to get everyone dressed and out the door for school and work. Most of the time, Eden eats in the car on the way to school. She also doesn’t need much since they have a morning snack, but I like to get something in her stomach to start the morning. There is also nothing better than telling a toddler she gets to eat a cookie for breakfast!

She doesn’t have to know that these cookies are filled with bananas, honey, oats and fruits. No added refined sugar!! And it’s easy to eat in the car! You can freeze them, too (that is if they don’t get eaten quickly like they did in my house).

RECIPE:

STEP 1: Prepare cookie sheets by covering with parchment and preheat the oven to 350 degrees.

STEP 2: Stir together banana, peanut butter, honey, milk and vanilla together in a large bowl. Set aside.Breakfast Cookies

STEP 3: In another bowl, mix oats, whole wheat flour, cinnamon and baking soda together.Breakfast Cookies

STEP 4: Stir dry mixture into banana mixture until just combined.Breakfast Cookies

STEP 5: Fold cranberries into mixture.Breakfast Cookies

STEP 6: Use a large ice scream scoop to scoop dough onto prepared pans a few inches apart.Breakfast Cookies

STEP 7: Bake for 15-16 minutes or until cookies are slightly browned.

Ingredients

  • 1/2 cup bananas mashed
  • 1/2 cup crunchy peanut butter
  • 1/2 cup honey
  • 2 tablespoons fat free milk or any milk of your choice
  • 1 teaspoon vanilla
  • 1 cup quick cooking oats
  • 1/2 cup whole wheat flour
  • 2 teaspoons cinnamon
  • 1/4 teaspoon baking soda
  • 1 cup dried cranberries

Instructions
