FEEDIN’ EDEN: APPLE MUFFINS

Hello again. Welcome back to “Feedin’ Eden”. This is another recipe I got from www.babyfoode.com. Seriously…my favorite source for all things baby and toddler food. Her recipes are tasty and interesting and my little lady loves them! I made almost every puree recipe she has before Eden was eating solid foods and I just can’t say enough about it. (no, I’m not getting paid or endorsed by her or anything like that…i just love her). Check her out.

This recipe is pretty simple and another great thing to make and then pack away in the freezer. I pull one out in the morning while I get ready, pop it in the microwave for a few seconds and just like that, I have a quick breakfast on a busy weekday morning that is healthy and delicious. Follow recipe below and free yourself from the stress of crazy mornings!!ingredients_Fotor

  1. Preheat the oven to 350 degrees. Spray a muffin tin or just use liners. (as I did…easy cleanup!)
  2. Whisk together all the dry ingredients in a big bowl.

3. Add in all the wet ingredients and mix until just combined. Do not ever over mix muffins batter…you want them to stay light and fluffy, especially since this recipe uses whole wheat flour which makes it a bit more dense than using an all-purpose.mix

Side note: I made my own apple puree by cutting up apples, placing them in a large pot, covering with water and bringing to boil. Then, let simmer for about 15 minutes or until apples are tender. You can totally use store bought apple sauce, but when I went to make these I realized the applesauce I had was expired and didn’t want to go to the grocery store. I had some apples in the fridge, so it was easier to make a quick puree, then trek to the grocery store where I would inevitably buy extra things I don’t need. J

  1. Scoop (I used an ice cream scoop) batter into muffin tins and bake for 25 to 30 minutes.dough_tindough_tin1

Yall, these muffins are so moist and flavorful. I always worry a little bit about whole wheat flour because it tends to make things more dense and has that wheaty flavor, but the amount of apple and cinnamon in this recipe makes these so, so good. I hope this recipe will help all you busy mammas out there. You cook one batch and you have breakfast for almost 2 weeks!!! I usually give Eden 1 muffin with a side of fruit and she is well fed and happy! The apples and whole wheat are also such a good source of fiber for her, too…bonus!!!single muffin1

Apple Muffins

2 cups white whole wheat flour
1/2 cups sugar
2 tsps baking powder
1/2 tsp baking soda
1/2 tsp salt
2 tsps cinnamon
1/2 tsp allspice
1/3 cup olive oil
1 cup apple puree
1 egg
1 apple, grated

1. Preheat oven to 350 degrees.
2. Line a muffin tin with liners or spray with cooking spray.
3. Mix together all the dry ingredients: white whole wheat flour, sugar, baking powder, baking soda, salt, cinnamon, and allspice.
4. Add in all the wet ingredients: olive oil, apple pure, egg (slightly beaten), and grated apple,
side note: you are going to want to squeeze all the water out of the apple
5. Stir together until just combined.
6. Scoop into the muffin tins.
7. Bake for 25-30 minutes.
8. Allow to cool on a wire rack.

Note: Eat right away or wrap in plastic wrap and stick in the freezer!
