STEP 1: Mix together pancake mix, cinnamon, nutmeg and cloves in a large bowl.
STEP 2: Beat eggs and milk together in a small bowl.

STEP 3: Add the wet ingredients to the dry ingredients and stir until just combined.
STEP 4:
Fold in shredded carrots.


STEP 5: Heat a large griddle and spray with cooking spray.
STEP 5: Scoop 1/4 cup batter onto griddle.
STEP 6: When bubbles start to form around the edge, flip pancake and continue to cook until done.
