DONUTS ARE MY LOVE LANGUAGE: PINK LEMONADE DONUTS

It has been awhile since I added anything to my Donuts of My Love Language Series. But I am really focusing on making more donuts in 2019. Call it a resolution, if you will.

Today, I have brought you a cake donut recipe that would also be perfect for your Easter brunch this weekend. It’s a pretty pastel pink and has that citrus flavor I LOVE for Spring. Enjoy!

WHAT YOU NEED:

Mini Donut Pan – I got mine from Sur la Table here, but you can get this one from Amazon or this one from Target.
Pink Food Coloring – I like the gel like this
Piping Bag – this is unnecessary as you can just spoon the batter in, but it just makes for a cleaner and faster time with the donuts. I get my piping bags from Amazon.

RECIPE:

STEP 1: Preheat the oven to 425 degrees and spray your donut pan with cooking spray.

STEP 2: Mix together sugar, brown sugar and lemon zest in a bowl. Set aside.

STEP 3: Beat butter in a large mixing bowl until creamy.


STEP 4: Add lemon sugar mixture and vegetable oil and beat until fluffy.

STEP 5: Add eggs and beat until combined.

STEP 6: Add vanilla and mix to combine.

STEP 7: Sift flour, baking powder, baking soda and salt together.

STEP 8: Alternate flour and milk, beginning and ending with flour. Mix after each addition until just combined.

STEP 9: Pipe or spoon batter into the prepared donut pan.

STEP 10: Bake for 6-8 minutes or until toothpick comes out clean.

STEP 11: Cool in the pan for about 5 minutes then move to a wire rack to cool completely.

DONUT GLAZE:

STEP 12: Once donuts have cooled, make the glaze by mixing powdered sugar, milk, lemon juice together. Add a couple drops of food coloring and mix until you reach your desired color. You may need to add more powdered sugar if it is too thin. Just add a tablespoon at a time until you reach a nice thick consistency that will coat the back of the spoon.

STEP 13: Dip the tops of the donuts into the glaze, let drip a little and place on a rack to dry.

Pink Lemonade Donuts

Servings 12 Mini Donuts

Ingredients

Donuts

  • 1/4 cup sugar
  • 2 tablespoons + 2 teaspoons brown sugar
  • 2 lemons zested
  • 2 tablespoons vegetable oil
  • 1 egg
  • 1/2 teaspoon vanilla
  • 2 tablespoons butter
  • 1 1/3 cup flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon baking soda

Glaze

  • 3/4 cup powdered sugar
  • 1 teaspoon milk
  • 2-3 tablespoons lemon juice
  • 2-3 drops pink food coloring

Instructions

  1. Preheat oven to 425 degrees and spray your donut pan with cooking spray.

  2. Mix together sugar, brown sugar and lemon zest in a bowl. Set Aside.

  3. Beat butter in a large mixing bowl until creamy.

  4. Add lemon sugar mixture and vegetable oil and beat until fluffy.

  5. Add egg and beat until combined.

  6. Add vanilla and mix to combine.

  7. Sift flour, baking powder, baking soda and salt together.

  8. Alternate flour and milk, beginning and ending with flour. Mix after each addition until just combined.

  10. Bake for 6-8 minutes or until toothpick comes out clean.

  11. Cool in the pan for about 5 minutes then move to a wire rack to cool completely.

  12. Make the glaze, but mixing powdered sugar, milk, lemon juice and a couple drops of food coloring together.

  13. Once donuts have cooled, Dip the tops of the donuts into the glaze and let dry on a cool rack.
