Christmas morning is the most magical day of the year! A good festive Christmas breakfast is always in order. It is just a way to make the day extra special and give you something yummy to munch on while opening gifts and enjoying the day. We have tried a lot of festive breakfast over the years from Gingerbread Pancakes to Overnight Eggnog French Toast Casserole to Eggnog Doughnuts AND Waffles. It is always fun to incorporate the flavors of the season into your favorite breakfast dish. With 3 kids, it gets harder to be slaving in the kitchen while other are waking up and anxious to open gifts. Pancakes is one of those easy breakfast that you can mix together really quickly and cooks relatively fast. We got really festive this year by adding another favorite flavor to make Festive Red Velvet Pancakes. It’s basically like eating dessert for Christmas, but that is totally ok on Christmas morning!

Recipe:

STEP 1: Preheat your griddle to 350 degrees. Add flour, cocoa, baking powder, baking soda and salt to a mixing bowl.
STEP 2: Whisk together to combine.
STEP 3: Whisk together milk and vinegar in a small bowl. (Allow it to rest for 2 minutes)

STEP 4: Pour the milk/vinegar into a large mixing bowl and add eggs, sugar, red food coloring, vanilla and melted butter. Whisk well until combined.
STEP 5: Add the dry ingredients and mix until just combined.

STEP 6: Spray the griddle with cooking spray and pour a little bit of batter onto hot griddle.
STEP 7: Cook until bubbles start to form.
STEP 8: Flip and cook on other side.

  • 2 1/3 cup all-purpose flour
