It is DAY 12 of 12 Days of Christmas!! I hope you have enjoyed the 12 “Christmas” themed post and made a few along the way. We are finishing out strong with making some with the ULTIMATE Christmas flavor. December is really the only time of year you have eggnog. You literally can’t buy it until at least November. I happen to LOVE it (Southern Comfort is the best brand) and so I try to incorporate it in recipes through the season. 

I love to bring you a great brunch recipe every year because there it not much better than eating a delish breakfast/brunch on Christmas morn. And, eggnog waffles are the perfect Christmas morning treat.

Ingredients for Eggnog Waffles

Recipe:

STEP 1: Add flour, baking powder, salt, nutmeg and light brown sugar and stir to combine.

STEP 2: Separate the eggs.

STEP 3: Add eggnog, oil, vanilla and egg yolks to another bowl and mix to combine.

STEP 4: Mix the egg whites until stiff peaks form. Set aside.

STEP 5: Combine dry and wet ingredients and stir to combine.

STEP 6: Fold the egg whites into the batter.

STEP 7: Heat your waffle iron and spray with cooking spray.

STEP 8: Cook your waffles according to manufacturer’s instructions.

Make  the Spiced Syrup:

STEP 1: Add brown sugar, cinnamon and nutmeg to a small saucepan.

STEP 2: Add cornstarch to water and stir to combine.

STEP 3: Add cornstarch mixture to the saucepan and stir to combine.

STEP 4: Heat mixture over medium heat, stirring occasionally, until mixtures comes to a simmer.

STEP 5: Once simmering, cook for an additional 2-3 minutes. Remove from heat.

STEP 6: Add butter and vanilla and stir. Allow to cool a bit before stirring.

Eggnog Waffles with Spiced Syrup

Ingredients

Waffles

  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 2 tablespoons brown sugar
  • 2 cups eggnog
  • 1/3 cup vegetable oil
  • 2 teaspoons vanilla
  • 2 eggs, separated 

Spiced Syrup

  • 1 cup brown sugar
  • 1 teaspoon cinnamon
  • pinch nutmeg
  • 1 cup water
  • 1 teaspoon cornstarch
  • 2 tablespoons butter
  • 1 teaspoon vanilla

Instructions

  2. Separate the eggs.
  3. Add eggnog, oil, vanilla and egg yolks to another bowl and mix to combine.

  5. Combine dry and wet ingredients and stir to combine.
  6. Fold the egg whites into the batter.
  7. Heat your waffle iron and spray with cooking spray.
  8. Cook waffles according to manufacturer's instructions.
  9. Make the syrup: Add brown sugar, cinnamon and nutmeg to a small saucepan.
  10. Add cornstarch to water and stir to combine.
  11. Add cornstarch mixture to the saucepan and stir to combine.
  12. Heat mixture over medium heat, stirring occasionally, until mixtures comes to a simmer.
  13. Once simmering, cook fo an additional 2-3 minutes. Remove from heat.
  14. Add butter and vanilla and stir. Allow to cool a bit before serving.
