S’MORES BARS

Over the summer, I was asked to make some sort of S’mores related dessert for Father’s Day at church to go with an outdoorsy theme. I, of course, knew I had to make my s’mores pops which you can see here. But I saw another idea on pinterest for s’mores bars and decided to try to make my own version to see how it turned out. It seems like s’mores are perfect year ‘round. I of course made these in the summer and when I was in Kroger back in July, they had s’mores displays with boxes of graham crackers and marshmallows near the checkout stand for a summer treat. However, in that moment, I thought to myself…”who wants to make a fire when it’s 90 degrees outside?” Not me. So this is a perfect way to get your s’mores fix without having to build a fire. Of course, now that it is fall, I really want all the yummy and comforting sweet treats that brings. S’mores are so nostalgic and I always have to find a fire pit somewhere at some point during this time of year so I can catch my marshmallow on fire and add it to a piece of Hershey’s and graham cracker to enjoy that messy treat. However, this version is slightly less messy and still just as delicious. I hope you enjoy as much as I do!

If does require a few steps, but – trust me – it’s worth it. Easy step is fairly simple, it just takes a little time.

Make the Crust:

Step 1: Preheat oven to 350 degrees.

Step 2: Prepare an 8×8 baking dish with parchment.

Step 3: Mix together graham cracker crumbs, ¼ cup sugar, and butter.

Step 4: Press down into the baking dish and bake for 8-10 minutes.

Step 5: Let the crust cool completely.


Make the Marshmallow Filling:

Be sure to check out my post about homemade marshmallows here.

Step 1: In a bowl of an electric mixer, place the cold water.

Step 2: Sprinkle gelatin over the water and let it stand for 10 minutes.

Step 3: In a medium saucepan, mix sugar, corn syrup and ¼ cup water.

Step 4: Bring the mixture to a boil over medium-high heat.

Step 5: Attach a candy thermometer and let this mixture cook until it reaches 240 degrees.

Step 6: Once this mixture reaches 240 degrees, turn the electric mixer on low and slowly pour over gelatin.

Step 7: Once all the mixture is in the mixer bowl, turn it up to high and let it mix for 8-10 minutes or until doubled in size.

Step 8: Add vanilla and mix for another minute.

Step 9: Pour this mixture over the cooled crust and let it rest, uncovered for 8 hours or overnight.

Make the Chocolate Topping:

Step 1: Melt together chocolate and butter in microwave or in a double boiler.

Step 2: Pour over marshmallow and allow to cool completely.

note: I found that putting it in the fridge before cutting it made for a really nice clean cut.

Ingredients

Crust:

  • 1 stick butter melted
  • 1 1/2 cup graham cracker crumbs finely crushed

Marshmallow Filling:

  • 3 envelopes unflavored gelatin
  • 2 cups sugar
  • 2/3 cup light corn syrup
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla

Chocolate Glaze:

  • 4 ounces semisweet chocolate
  • 1/4 cup butter

Instructions
