TURKEY MEATLOAF WITH CRANBERRY GLAZE

I am a bit notorious for overdoing it. I always make 1 (or 3) too many dishes for every holiday, shower, party, etc. I have really tried to tone it down in recent years but I always overdo it on Thanksgiving. It’s my favorite holiday meal to cook and there are always new side dishes I wanna try.

All that to say, there have been a few Thanksgivings when it was just a couple of us. I didn’t need to make a huge turkey and 18 sides. But, I always still want to enjoy the flavors of Thanksgiving. For those of you having smaller celebrations, this recipe is for you. I love a meatloaf (I did grow up in the south, after all) and this herb-y and moist turkey meatloaf with the combination of cranberry glaze is perfect for a Thanksgiving meal. It’s all the flavors you love about the holiday all in one bite.

STEP 1: Line a loaf pan with foil.

STEP 2: Mix together 3 tablespoons ketchup, 2 teaspoons dry mustard and 1/4 cup cranberry sauce. Set aside.

STEP 3: Mix together ground turkey, egg, crushed saltines, garlic, salt, thyme, parsley, rosemary, onion powder, garlic pepper and ketchup/cranberry mixture.

STEP 4: Transfer mixture to loaf pan.

STEP 5: Bake at 350 for 1 hour.

STEP 6: Mix together remaining cranberry glaze and brown sugar.

STEP 7: Spread mixture on top of meatloaf and cook for another 10-15 minutes or turn your broiler on for a few minutes to get that crustiness everyone loves.

Ingredients

  • 3 tablespoons ketchup
  • 2 teaspoons dry mustard
  • 1 16 ounce can jellied cranberry sauce
  • 1 pound ground turkey
  • 1 large egg
  • 10 saltines crushed
  • 2 cloves garlic
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried parsely
  • 1/2 teaspoon dried rosemary
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic pepper

Instructions

  1. Preheat the oven to 350 degrees and line a loaf pan with foil.

  2. Mix together ketchup, dry mustard and 1/4 cup cranberry sauce in a small bowl. Set aside.

  3. Mix together ground turkey, egg, saltines, garlic, salt, thyme, parsley, rosemary, onion powder, garlic pepper and ketchup/cranberry mixture in a large bowl.

  4. Transfer mixture to a loaf pan.

  5. Bake for 1 hour.

  6. Mix together remaining cranberry sauce and brown sugar.

  7. Spread mixture on top of meatloaf and cook for another 10-15 minutes or turn your broiler on for a few minutes to get the topping caramelized.
