Quick & Easy Mini Strawberry Shortcakes Recipe

I’m back! I took a break to move into our new home. I’ve finally crawled out of my sea of boxes and chaos just in time to show you the PERFECT summer dessert idea! Not only is it strawberry season, but there is something about summer that makes me want all the fruity things. These Quick & Easy Mini Strawberry Shortcakes use ALL store bought ingredients to help you throw together a mini version of a classic dessert that would be a great idea for any summer shower, bbq or even July 4th celebration! You arrange all the components in a mini mason jar which makes these not only delicious, but the cutest little display at your summer party!

Assemble Your Easy Mini Strawberry Shortcakes:

STEP 1: Mix your angel food cake batter according to package directions.
STEP 2: Pour batter into a 15″x10″ rimmed lined baking pan and bake for 12-15 minutes or until toothpick comes out clean.
STEP 3: Allow cake to cool while preparing the strawberries.

STEP 4: Slice strawberries to desired size. I quartered mine.
STEP 5: Place strawberries in a bowl and sprinkle with sugar.
STEP 6: Once cake has cooled, use a round cookie cutter to cut the cake into circles. I used a 2″ biscuit cutter because the mason jars I used were 2″ wide.

STEP 7: Assemble the mini shortcakes by placing the cut cake in the mason jar.
STEP 8: Add a spoonful of strawberries on top.
STEP 9: Whip your whipping cream with sugar (or use cool whip) and pipe onto top of strawberries. Garnish with half of a strawberry.

Tips for using these Easy Mini Strawberry Shortcakes:

  1. I used these mini jars that are only 2″ high. If you use the taller jars, just layer the cake, strawberries and whipped cream twice.
  2. Use cool whip to make this EVEN easier!
  3. Add some blueberries with the strawberries to make the perfect July 4th desserts!

Satisfy your sweet tooth with these easy mini strawberry shortcakes. Perfect for a summer dessert that is sure to impress your guests.
