FALL IS MY FAVORITE: PUMPKIN MUFFINS WITH STREUSEL TOPPING

Happy National Pumpkin Day!! In honor of this day, I am bringing you an amazing Pumpkin Muffin recipe. I have tried so many recipes for this as I need to curl up every fall with a pumpkin muffin or pumpkin bread and a cup of coffee and fully take in all the glory that is FALLLLL! I love it so much. This is definitely at the top of my muffin recipe list. The streusel topping and glaze just adds so much yumminess to these super moist muffins. These are ‘fall in my mouth!’ I hope you enjoy as much as I did.

Step 1: Preheat oven to 425 degrees and muffin liners to a muffin pan.
Step 2: Whisk together flour, baking soda, cinnamon, pumpkin pie spice and salt together and set aside.
Step 3: Whisk together oil, sugar, brown sugar, pumpkin puree, eggs and milk in another bowl.
Step 4: Add the wet ingredients to the dry ingredients and fold in mixture until just combined.

Step 5: Scoop batter into muffin tins.

Step 6: For the streusel topping: Mix together the flour, sugar, brown sugar and pumpkin pie spice.

Step 7: Add the melted butter and stir until mixture comes together and crumbs form.

Step 8: Divide streusel topping among the wet batter until evenly distributed.


Step 9: Bake for 5 minutes, then reduce oven temperature to 350 degrees. Bake for 15-17 more minutes.

Step 10: Let muffins cool for about 10 minutes in the pan and then transfer to a wire rack to cool.

Step 11: To make the glaze, whisk together powdered sugar, maple syrup and milk until smooth.

Step 12: Drizzle over muffins.

Ingredients

Muffins:

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups pumpkin puree
  • 2 eggs large
  • 1/4 cup milk

Streusel Topping:

  • 3/4 cup all-purpose flour
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1 teaspoon pumpkin pie spice
  • 6 tablespoons butter melted

Glaze:

  • 1 1/2 cups powdered sugar
  • 2 tablespoons maple syrup
  • 2 tablespoons milk
