Pumpkin Muffins

Adapted from Sally's Baking Addiction

Servings 15 muffins

Ingredients

Muffins:

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 1/2 cups pumpkin puree
  • 2 eggs large
  • 1/4 cup milk

Streusel Topping:

  • 3/4 cup all-purpose flour
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1 teaspoon pumpkin pie spice
  • 6 tablespoons butter melted

Glaze:

  • 1 1/2 cups powdered sugar
  • 2 tablespoons maple syrup
  • 2 tablespoons milk

Instructions

Muffins:

  1. Preheat oven to 425 degrees and muffin liners to a muffin pan.

  2. Whisk together flour, baking soda, cinnamon, pumpkin pie spice and salt together and set aside.

  3. Whisk together oil, sugar, brown sugar, pumpkin puree, eggs and milk in another bowl.

  4. Add the wet ingredients to the dry ingredients and fold in mixture until just combined.

  5. Scoop batter into muffin tins.

Streusel Topping:

  1. Mix together the flour, sugar, brown sugar and pumpkin pie spice.

  2. Add the melted butter and stir until mixture comes together and crumbs form.

  3. Divide streusel topping among the wet batter until evenly distributed.

  4. Bake for 5 minutes, then reduce temperature to 350 degrees.

  5. Bake for 15-17 more minutes.

  6. Let muffins cool in pan for about 10 minutes than transfer to a wire rack to cool.

Glaze:

  1. Whisk together powdered sugar, maple syrup and milk. until smooth.

  2. Drizzle on top of muffins.
