BANANA COFFEE CAKE MUFFINS

I am keeping with the breakfast theme today and sharing a recipe for Banana Coffee Cakes. If you have read my blog before you know I make a lot of breakfast items for church and I just love to throw a brunch. These are some of the yummiest muffins you can make. They truly are mini coffee cakes. They are buttery and have the perfect amount of banana flavor.

Sometimes I think muffins can be kinda boring. They are just the filler item that nobody really eats. They can be bland or dry and donuts are just better. I know…I know…I think the same things. But a really good muffins is really worth it and these are REALLY GOOD MUFFINS. If you are looking for something to spice up that family brunch, this is a great recipe to try.

STEP 1: Make the streusel: (this is the best part!). Add 3/4 cup flour, 3/4 cup brown sugar and 1/4 teaspoon salt to the bowl of a food processor. Cut 1/4 cup butter into chunks and add to the flour mixture. Pulse this together until it resembles crumbs. Set it aside.

STEP 2: Beat 1/4 cup butter and 1 cup brown sugar together until smooth.

STEP 3: Add eggs and vanilla and beat until smooth.

STEP 4: Add mashed bananas and mix.

STEP 5: Whisk together the 1 1/2 cups flour, baking powder and salt.

STEP 6: Stir the dry ingredients into the wet ingredients.

STEP 7: Fold in the sour cream gently until just incorporated.

STEP 8: Divide batter into muffin cups (either greased and floured or use muffin liners).


STEP 9: Sprinkle streusel on top of muffins.

STEP 10: Bake at 350 for 18-20 minutes or until toothpick comes out clean.

STEP 11: Cool for about 5 minute in the pan and then remove to cool completely on cooling rack.

Ingredients

  • 2 1/4 cups all-purpose flour divided
  • 1 3/4 cups brown sugar divided
  • 1/2 teaspoon salt divided
  • 1/2 cup butter divided
  • 2 large eggs
  • 1 tablespoon vanilla
  • 1/2 cup mashed banana ripe
  • 2 tablespoons baking powder
  • 1/4 cup sour cream

Instructions

Streusel:

  1. Add 3/4 cup flour, 3/4 cup brown sugar, and 1/4 teaspoon salt to the bowl of a food processor.
