Banana Coffee Cakes

Cook Time 20 minutes
Servings 18 muffins

Ingredients

  • 2 1/4 cups all-purpose flour divided
  • 1 3/4 cups brown sugar divided
  • 1/2 teaspoon salt divided
  • 1/2 cup butter divided
  • 2 large eggs
  • 1 tablespoon vanilla
  • 1/2 cup mashed banana ripe
  • 2 tablespoons baking powder
  • 1/4 cup sour cream

Instructions

Streusel:

  1. Add 3/4 cup flour, 3/4 cup brown sugar, and 1/4 teaspoon salt to the bowl of a food processor.

  2. Cut 1/4 cup butter into chunks and add to the flour mixture.

  3. Pulse the mixture in the food processor until it resembles crumbs. Set it aside.

  4. Beat 1/4 cup butter and 1 cup brown sugar together in a large bowl until smooth.

  5. Add eggs and vanilla and beat until smooth.
  6. Add mashed bananas and mix.

  7. Whisk together the 1 1/2 cups flour, baking powder and salt.

  8. Stir the dry ingredients into the wet ingredients.

  9. Fold in the sour cream gently until just incorporated.

  10. Divide batter into a muffin pan.

  11. Sprinkle streusel on top of muffins.

  12. Bake at 350 degrees for 18 - 20 minutes or until toohepick comes out clean.

  13. Cool for about 5 minutes in the pan and than remove to cool completely on a cooling rack.
