It is officially 1 week until Christmas!! As you are thinking about your Christmas Day feast, be sure to add THIS Red Velvet Cheesecake to your Dessert Menu. It is creamy with a hint of cocoa and topped with that Cream Cheese Frosting that is a MUST on Red Velvet Cake. It will be Oh so festive, and look impressive, even though it is truly simple to make.

Recipe:
STEP 1: Preheat oven to 325 degrees.
STEP 2: In a small bowl, mix chocolate graham cracker crumbs, melted butter and 1 tablespoon sugar together.
STEP 3: Press the mixture into the bottom of a springfrom pan. I add parchment paper to the bottom of my pan to make removing it easier.
STEP 4: In the bowl of an electric mixer (or large mixing bowl), add the 3 packages of cream cheese and 1 ½ cups sugar and mix on medium speed about 1 minute.
STEP 5: Add eggs, unsweetened cocoa, sour cream, buttermilk, vanilla, vinegar, and red food coloring to the bowl and mix on low until well combined and smooth.
STEP 6: Pour cheesecake batter onto prepared crust.
STEP 7: Bake cheesecake for 10 minutes. Turn oven down to 300 degrees.
STEP 8: Bake cheesecake for another 1 hour and 15 minutes or until it is no longer jiggly in the middle.
STEP 9: Turn the oven off and let the cheesecake stand in the oven for 30 minutes, then remove from the oven.

STEP 10: Cover and chill for at least 8 hours or overnight.
*Side note: My cheesecakes almost always crack on the top. I have tried everything – water baths and the like. I blame it on my oven. It does not heat evenly and makes baking delicate things a challenge. But no worries! This is the perfect cheesecake for that since you cover it with frosting.
STEP 11: Once completely chilled, make the frosting by adding the 3-ounce package of cream cheese and ¼ cup butter to a medium bowl.
STEP 12: Beat butter and cream together until smooth.
STEP 13: Add powdered sugar in gradually. Add vanilla and beat until smooth.
STEP 14: Spread frosting evenly over the top of the cheesecake.
STEP 15: Remove the sides and bottom of a springform and transfer to a serving platter.

Red Velvet Cheesecake

Ingredients
Crust:
- 1 1/2 cups chocolate graham cracker crumbs

Cheesecake:
- 3 8 oz packages cream cheese softened
- 1 1/2 cups sugar
- 4 large eggs
- 1 cup sour cream
- 1/2 cup buttermilk
- 3 tablespoons unsweetened cocoa
- 1 teaspoon white vinegar
- 2 bottles red food coloring
- 2 teaspoons vanilla
Frosting:
- 3 oz cream cheese
- 1/4 cup butter softened
- 1 teaspoon vanilla
- 2 cups powdered sugar
Instructions
