Red Velvet Cheesecake

Adapated from Southern Living

Ingredients

Crust:

  • 1 1/2 cups chocolate graham cracker crumbs
  • 1/4 cup butter melted
  • 1 tablespoon sugar

Cheesecake:

  • 3 8 oz packages cream cheese softened
  • 1 1/2 cups sugar
  • 4 large eggs
  • 1 cup sour cream
  • 1/2 cup buttermilk
  • 3 tablespoons unsweetened cocoa
  • 1 teaspoon white vinegar
  • 2 bottles red food coloring
  • 2 teaspoons vanilla

Frosting:

  • 3 oz cream cheese
  • 1/4 cup butter softened
  • 1 teaspoon vanilla
  • 2 cups powdered sugar

Instructions

  1. Preheat oven to 325 degrees.

  2. In a small bowl, mix chocolate graham cracker crumbs, melted butter and 1 tablespoon sugar together.

  3. Press the mixture into the bottom of a springform pan.

  4. In the bowl of an electric mixer, add 3 packages of cream cheese and 1 1/2 cups sugar and mix on medium speed about 1 minute.

  5. Add eggs, unsweetened cocoa, sour cream, buttermilk, vanilla, vinegar and red food coloring to the bowl and mix on low until well combined and smooth.

  6. Pour cheesecake batter onto prepared crust.

  7. Bake cheesecake for 10 minutes. Turn oven down to 300 degrees.

  8. Bake cheesecake for another 1 hour and 15 minutes or until it is no longer jiggly in the middle.

  9. Turn the oven off and let the cheesecake stand in the oven for 30 minutes, then remove from the oven.

  10. Cover and chill for at least 8 hours or overnight.

  11. Once completely chilled, make the frosting by adding the 3 ounce package of cream cheese and 1/4 cup butter to a medium bowl.

  12. Add powdered sugar in gradually. Add vanilla and beat until smooth.

  13. Spread frosting evenly over the top of the cheesecake.

  14. Remove the sides and bottom of the springform pan and transfer to a serving platter.
