OVERNIGHT COFFEE CAKE

Happy December! I’m starting a “12 Days of Christmas” series on Thursday, but wanted to bring you one more recipe before I start that. This is still a great recipe to have during the holidays, especially for Christmas morning because you can prepare everything the night before. Y’all know how much I love breakfast/brunch and this is a yummy classic dish. Hope this is one that can maybe make life a little easier this season and give you more time to spend with your loved ones.

PREPARE THE STREUSEL:

STEP 1: Stir all the ingredients together. SUPER HARD, right?

PREPARE THE BATTER:

STEP 2: Grease and flour a 9 x 13 inch pan.

STEP 3: Cream the butter until creamy.

STEP 4: Add the sugar to the butter and mix well.

STEP 5: Add the eggs and beat well.

STEP 6: Sift together flour, baking powder, baking soda and salt.

STEP 7: Add the flour mixture to the butter/sugar mixture, alternating with buttermilk. Begin and end with flour.

STEP 8: Stir in vanilla extract.

STEP 9: Pour the batter into the prepared pan.

STEP 10: Cover the pan with saran wrap and chill this for 8 hours or up to 24.

STEP 11: Preheat oven to 350 degrees and bring the cake up to room temperature for 30 minutes.

STEP 12: Sprinkle the batter with the streusel mixture.

STEP 13: Bake 30-35 minutes or until a tooth pick comes out clean.

PREPARE THE GLAZE:

STEP 14: Combine powdered sugar, vanilla and milk in a bowl and stir until smooth.

STEP 15: Drizzle the glaze over the top of the cake.

Ingredients

STREUSEL:

  • 1/2 cup pecans chopped
  • 1/2 cup walnuts chopped
  • 1/2 cup slivered almonds
  • 1/2 cup brown sugar
  • 6 tablespoons all-purpose flour
  • 3 tablespoons butter melted
  • 1 teaspoon cinnamon

COFFEE CAKE:

  • 3/4 cup butter softened
  • 1 cup sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract

VANILLA GLAZE:

  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons milk

Instructions
