Overnight Coffee Cake

Ingredients

STREUSEL:

  • 1/2 cup pecans chopped
  • 1/2 cup walnuts chopped
  • 1/2 cup slivered almonds
  • 1/2 cup brown sugar
  • 6 tablespoons all-purpose flour
  • 3 tablespoons butter melted
  • 1 teaspoon cinnamon

COFFEE CAKE:

  • 3/4 cup butter softened
  • 1 cup sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk
  • 1 teaspoon vanilla extract

VANILLA GLAZE:

  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2-3 tablespoons milk

Instructions

MAKE THE STREUSEL:

  1. Stir all the streusel ingredients together in a bowl. Cover with saran wrap and set aside.

MAKE CAKE BATTER:

  1. Grease and flour a 9x13 inch pan.

  2. Cream the butter until creamy.

  3. Add the sugar to the butter and mix well.

  4. Add eggs and beat well.

  5. Sift flour, baking powder, baking soda and salt.

  6. Add the flour mixture to the butter/sugar mixture, alternating with buttermilk. Begin and end with flour.

  7. Stir in vanilla extract.

  8. Pour the batter into the prepared pan.

  9. Cover the pan tightly with saran wrap and chill for 8 hours or up to 24.

  10. Preheat the oven to 350 degrees and bring the cake up to room temperature for 30 minutes.

  11. Sprinkle the batter with the streusel mixture.

  12. Bake 30-35 minutes or until a tooth pick comes out clean.

PREPARE THE GLAZE:

  1. Combine powdered sugar, vanilla and milk in a bowl and stir until smooth.

  2. Drizzle the glaze over the top of the cake.
