Pumpkin Bread with Eggnog Glaze

Adapted from My Recipes

Servings 2 loaves

Ingredients

  • 3 cups sugar
  • 1 cup coconut oil
  • 4 large eggs
  • 3 1/3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon pumpkin pie spice
  • 2/3 cup water
  • 1 can pumpkin puree

Eggnog Glaze:

  • 2 cups powdered sugar
  • 4 tablespoons eggnog
  • 1/4 teaspoon vanilla
  • 1/4 teaspoon nutmeg
  • pinch cinnamon

Instructions

  1. Preheat the oven to 350 degrees and prepare 2 loaf pans by greasing or placing parchment in each one. Set aside.

  2. Mix sugar and coconut oil together in a large mixing bowl.

  3. Add eggs and beat well. Set aside.

  4. Whisk together all-purpose flour, baking soda, baking powder, salt, cinnamon and pumpkin pie spice in another bowl.

  5. Add flour and water alternately to the sugar mixture and beat after each addition until just combined.

  6. Add pumpkin puree and beat until combined.

  7. Pour batter evenly into each pan

  8. Bake for 55-65 minutes or until tooth pick comes out clean.

  9. Cool on a wire rack inside the pans for 10 minutes. Invert onto wire rack.

Eggnog Glaze:

  1. Mix together the powdered sugar, eggnong, vanilla, cinnamon & nutmeg in a small bowl until smooth.

  2. Pour glaze over warm loaves and allow to cool completely.
