Gingerbread Pancakes

Ingredients

  • 2 cups all-purpose flour
  • 1 1/4 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon cinnamon
  • 3/4 teaspoon ginger
  • pinch cloves
  • pinch nutmeg
  • pinch allspice
  • 1 1/2 cups buttermilk
  • 1/4 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla

Instructions

  1. Whisk flour, baking powder, baking soda, salt, cinnamon, ginger, cloves, nutmeg and allspice together in a large bowl.

  2. In a smaller bowl, add buttermilk, molasses, egg and vanilla and whisk to combine.

  3. Add the wet ingredients to the dry ingredients and fold until just combined.

  4. Heat a griddle or large pan over medium-high heat and spray with cooking spray.

  5. Scoop about 1/4 - 1/2 cup of batter onto griddle and cook for 2-3 minutes or until edges start to bubble.

  6. Flip pancakes and cook the other side for an additional 1-2 minutes.

  7. Serve immediately.
