Sift together flour, cocoa powder, baking soda and salt. Set aside.
Beat butter, sugar and brown sugar together until light and fluffy.
Add eggs and peppermint extract and beat until well combined.
Add flour mixture to the wet ingredients and beat until just combined.
Wrap the dough in plastic wrap and chill for at least 1 hour.
When ready to bake cookies, preheat oven to 350 degrees and prepare baking sheets by lining with parchment paper.
Roll dough into balls and place on prepared pans.
Bake cookies for 10 minutes. Cool on pan for a few minutes and then transfer to a cooling rack to cool completely.
Once cookies are cool, melt white chocolate or candy melts according to package directions.
Dip each cookie half way into white chocolate and place on waxed paper to harden.
Sprinkle immediately with crushed candy canes.
