There are a few flavors I HAVE to have every year at Christmas Time. Eggnog, Red Velvet, Gingerbread & PEPPERMINT! Also, Christmas is not Christmas without cookies. It’s Day 3 of 12 Days of Christmas and I am sharing a cookie recipe that is so yummy and festive for the season.

Ingredients for Cookies

Recipe:

STEP 1: Sift together flour, cocoa powder, baking soda, and salt, Set aside.

STEP 2: Beat butter, sugar & brown sugar together until light and fluffy.

STEP 3: Add eggs and peppermint extract and beat until well combined.

STEP 4: Add flour mixture to the wet ingredients and beat until just combined.Flour mixture added to wet ingredients in mixing bowl

STEP 5:
Wrap the dough in plastic wrap and chill for at least 1 hour. I always make the day before and chill overnight.This also freezes beautifully.

STEP 6: When you are ready to bake your cookies, preheat the oven to 350 degrees. Prepare baking sheets by lining with parchment paper or a silicone mat.

STEP 7: Roll dough into balls and place on prepared pans.

STEP 8: Bake cookies for 10 minutes. Cool on pan for a few minutes and then transfer to a cooling rack to cool completely.

STEP 9: Once cookies are cool, melt white chocolate or candy melts according to package instructions.

STEP 10: Dip each cookie half way into melted white chocolate and place on wax paper to dry.

STEP 11: Immediately sprinkle with crushed candy canes.

Dark Chocolate Candy Cane Cookies

Cook Time 10 minutes

Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup Dutch-Process cocoa powder
  • 1/4 cup special dark cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter room temperature
  • 1/2 cup sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon peppermint extract
  • white chocolate or candy melts
  • candy canes crushed

Instructions

  1. Sift together flour, cocoa powder, baking soda and salt. Set aside.

  2. Beat butter, sugar and brown sugar together until light and fluffy.

  3. Add eggs and peppermint extract and beat until well combined.

  4. Add flour mixture to the wet ingredients and beat until just combined.

  5. Wrap the dough in plastic wrap and chill for at least 1 hour.

  6. When ready to bake cookies, preheat oven to 350 degrees and prepare baking sheets by lining with parchment paper.

  7. Roll dough into balls and place on prepared pans.

  8. Bake cookies for 10 minutes. Cool on pan for a few minutes and then transfer to a cooling rack to cool completely.

  9. Once cookies are cool, melt white chocolate or candy melts according to package directions.

  10. Dip each cookie half way into white chocolate and place on waxed paper to harden.

  11. Sprinkle immediately with crushed candy canes.
