Preheat your broiler.
Cut cheese into 1" chunks and spread in the bottom of a cast iron pan.
Drizzle olive oil over the cheese.
In a small bowl, mix together the garlic, rosemary and thyme.
Sprinkle garlic/herb mixtur over the cheese.
Sprinkle salt and pepper over cheese/herbs.
Broil cheese for about 6 minutes or until all the cheese is melted and lightly browned in spots.
Serve with crusty French Bread or Crackers.
