Here is something that is a MUST if your are ever in Nola. Cafe du Monde is definitely a wonderful tourist spot to go to. The smell of the fried dough and the stickiness of everything (due to the constant flinging or powdered sugar) in the open air restaurant is an experience you just have to have.
I don’t get to make it to one of my favorite cities as much as I would like, so sometimes I just have to pretend.
Get your deep fryer out and make your own yummy beignets.

Glass Mixing Bowls / Glass Measuring Cup
RECIPE:
STEP 1: Stir yeast and warm water together in a cup and let it stand for 5 minutes.
STEP 2: In a large bowl, stir together yeast mixture, evaporated milk, sugar, salt and egg until well blended.
STEP 3: Gradually stir in flour until a soft dough forms.
STEP 4: Cover and chill the dough overnight (at least 8 hours).
STEP 5: When you are ready to make the beignets, take the dough out and place on a well floured surface.
STEP 6: Knead the dough 5 or 6 times and then roll out into a 15 x 15 square. This doesn’t have to be perfect. I can never roll dough into squares. I love these mats by the way. I think I got mine here.
STEP 7: Cut your dough into 2-3″ squares, depending on how big you want your beignets.
STEP 8: Fill a large pot with oil (3-4 inches) and heat it to 375 degrees.

STEP 9: Once your oil is hot, carefully drop a few squares of dough into the oil. Don’t let them clump together. You can move them around with some tongs.
STEP 10: Fry for about 1 minute per side or until puffy and golden brown.

STEP 11: Drain the beignets on paper towels and continue with the rest of the dough.
STEP 12: Sprinkle with powdered sugar while warm.
Serve these immediately. They are not good the next day, but they are so yummy you wont have any left anyway!

Classic Beignets
Ingredients
- 1 pacakge dry yeast

- 1 teaspoon granulated sugar
- pinch salt
- 1 large egg beaten
- 4-4 1/2 cups all-purpose flour
- 1 quart vegetable oil
- 1 cup confectioners' sugar
