Classic Beignets

Servings 2 dozen

Ingredients

  • 1 pacakge dry yeast
  • 3/4 cup warm water
  • 1/4 cup evaporated milk
  • 1 teaspoon granulated sugar
  • pinch salt
  • 1 large egg beaten
  • 4-4 1/2 cups all-purpose flour
  • 1 quart vegetable oil
  • 1 cup confectioners' sugar

Instructions

  1. Stir yeast and warm water together in a cup and let it stand for 5 minutes.

  2. In a large bowl, stir together the yeast mixture, evaporated milk, sugar, salt and egg until well blended.

  3. Gradually stir in flour until a soft dough forms.

  4. Cover the dough and chill overnight (at least 8 hours).

  5. When you are ready to make the beignets, take the dough out and place on a well-floured surface.

  6. Knead the dough 5-6 times and then roll into a 15x15 inch square.

  7. Cut your dough into 2-3" squares.

  8. Fill a large pot with oil and heat it to 375 degrees.

  9. Once the oil it hot, carefully place 5-6 squares a dough (depending on the size of your pot) into the oil. Don't let them clump together.

  10. Fry for about 1 minute on each side.

  11. Drain beignets on paper towels and sprinkle with powdered sugar while warm.

  12. Serve immediately.
