CAJUN BOILED PEANUTS

I was raised up eating boiled peanuts. I have very vivid memories of my mom soaking and simmering peanuts in her big yellow cast iron pot for what seemed like days. Why is something so simple, so yummy??

Keeping with my Mardi Gras theme this week, I decided to put a spicy twist on the basic boiled peanut.

RECIPE:

STEP 1: Place about 1/3 cup of cajun seasoning in the bottom of a large stockpot.

STEP 2: Add peanuts, then fill the pot with water until peanuts are covered.


STEP 3: Allow the peanuts to soak for at least 8 hours or up to 24 hours. I weighed my peanuts down with a frying pan to ensure they all stayed submerged in the water.

STEP 4: Once you have soaked the peanuts, drain them and rinse thoroughly.

STEP 5: Pour the peanuts into a large crockpot.

STEP 6: Add salt, the rest of the cajun seasoning and crab boil to the crock pot.

STEP 7: Add water to cover peanuts and stir to combine all the seasonings.

STEP 8: Cook the peanuts in the crockpot on high for 6 hours. You can certainly simmer these on the oven for 6 hours, alternatively.

STEP 9: Allow to sit at room temperature for about an hour and serve and enjoy!

Cajun Spiced Boiled Peanuts

Ingredients

  • 1 1/2 pounds raw peanuts, in shell
  • 1/2 cup cajun seasoning divided
  • 1 4 oz bottle crab boil
  • 1/4 cup kosher salt

Instructions

  9. Allow to sit at room temperature for about 1 hour and enjoy!
