BLUE CHEESE BISCUITS

Let’s talk biscuits, yall. I am a southern girl, so you know I love some biscuits. There are so many amazing ways to make them. Angel biscuits, buttermilk biscuits, sweet biscuits, sweet potato biscuits, grands….that is what I grew up eating. My mom was not a biscuit maker, so I learned later in life how to make them. I have always been a pro at eating them, however. I’ve been experimenting with different kinds for years and this is one I learned how to make for Blake’s 30th birthday several years ago when he requested a Southern foods bar outfitted with biscuits and toppings. You can see that party here.

These are so savory and delish and would be amazing with a fig jam or maybe some kind of sweet glazed pork tenderloin in the center of them. I’ll get to work on that…

Ingredients for Blue Cheese Biscuits

RECIPE:

STEP 1: Preheat oven to 425 degrees.

STEP 2: Whisk together all-purpose flour, baking powder and salt in a bowl.

STEP 3: Dice cold butter into small chunks and add to the flour.

STEP 4: Using a pastry cutter or forks to cut the butter into the flour until its about the size of peas. You can also do this with a stand mixer and mix in the butter with paddle attachment.

STEP 5: In a small bowl, mix together buttermilk and egg.

STEP 6: Add buttermilk mixture to the flour and mix until just moistened.

STEP 7: Add the blue cheese and fold into dough until roughly combined.

STEP 8: Place dough onto a floured surface and knead dough 5-6 times until dough is smooth.

STEP 9: Roll the dough to be about 1/2″ thick.

STEP 10: Using a round biscuit cutter, cut out biscuits from dough.

STEP 11: Place onto a parchment lined sheet pan.

STEP 12: Mix together 1 egg and a little bit of water to make an egg wash and brush tops of the biscuits.

STEP 13: Sprinkle the tops with a pinch of sea salt, if desired.

STEP 14: Bake biscuits for 20-25 minutes, until browned.

  • 1 cup blue cheese crumbles
  • 1 large egg
  • 1 teaspoon water
  • pinch sea salt optional

Instructions

  1. Preheat the oven to 425 degrees.

  2. Whisk together all-purpose flour, baking powder and salt in a bowl.

  3. Dice cold butter into small chunks and add to the flour.

  4. Using a pastry cutter, cut butter into the flour until it's about the size of peas.

  6. Add buttermilk/egg mixture to the flour and mix until just moistened.

  7. Add the blue cheese and fold into dough until roughly combined.

  8. Place dough onto a floured surface and knead dough 5-6 times until dough is smooth.

  9. Roll the dough to be about 1/2" thick.

  10. Using a round biscuit cutter or glass, cut out biscuits from dough.

  11. Place biscuits onto a parchment lined sheet pan.

  12. Mix 1 egg with a teaspoon of water to make an egg wash and brush on top of the biscuits.

  13. Sprinkle the tops with a pinch of sea salt, if desired.

  14. Bake biscuits for 20-25 minutes, until browned.
