Blue Cheese Biscuits

Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 12 tablespoons unsalted butter
  • 1/2 cup buttermilk
  • 1 extra-large egg
  • 1 cup blue cheese crumbles
  • 1 large egg
  • 1 teaspoon water
  • pinch sea salt optional

Instructions

  1. Preheat the oven to 425 degrees.

  2. Whisk together all-purpose flour, baking powder and salt in a bowl.

  3. Dice cold butter into small chunks and add to the flour.

  4. Using a pastry cutter, cut butter into the flour until it's about the size of peas.

  5. In a small bowl, mix together buttermilk and the egg.

  6. Add buttermilk/egg mixture to the flour and mix until just moistened.

  7. Add the blue cheese and fold into dough until roughly combined.

  8. Place dough onto a floured surface and knead dough 5-6 times until dough is smooth.

  9. Roll the dough to be about 1/2" thick.

  10. Using a round biscuit cutter or glass, cut out biscuits from dough.

  11. Place biscuits onto a parchment lined sheet pan.

  12. Mix 1 egg with a teaspoon of water to make an egg wash and brush on top of the biscuits.

  13. Sprinkle the tops with a pinch of sea salt, if desired.

  14. Bake biscuits for 20-25 minutes, until browned.
