12 DAYS OF CHRISTMAS: GINGERBREAD SANDWICH COOKIES WITH LEMON CREAM FILLING

It’s Day 2 of 12 Days of Dwell & Dine Christmas!! Today I am bringing you a recipe for a sweet treat! I LOVE baking during the holidays. I remember growing up we always made 3 things every year: fudge, haystacks and chocolate covered pretzels! I would look forward to this every year. I still make fudge every year because it just seems like to me you should have it!

One of my favorite flavors of the season is gingerbread. I love the flavors of it and it screams CHRISTMAS to me. Also, making these make my house smell so, so good.

I came across this recipe many years ago and it is alway a go-to. It so Christmas-y and is perfect for a party or to package and give away as a gift. You can also make the dough ahead of time. I try to make a bunch of doughs early in the season and freeze so it’s easy to pull out and bake in the midst of such a busy season. I hope you enjoy!

STEP 1: Whisk together all-purpose flour, ginger, cinnamon, baking soda, nutmeg and salt in a bowl.

STEP 2: In a large bowl, mix butter and brown sugar until light and fluffy.


STEP 3: Add in the molasses, egg and vanilla (the yummy stuff) and beat well.

STEP 4: Add flour mixture in batches an mix well on low speed until dough forms.

STEP 5: Pat dough into a round disc and cover in plastic wrap. At this point you can freeze for later. If you want to make now, you need to refrigerate the dough for at least 4 hours or overnight is even better.

STEP 5: When you are ready to bake, preheat the oven o 350 degrees.

STEP 6: Pinch off a little bit of dough and roll into a ball, about 1 inch wide.

STEP 7: Roll your ball into granulated sugar and place on a parchment-lined cookie sheet.

STEP 8: Bake 8-10 minutes.

STEP 9: Transfer to a wire rack to cool completely.

MAKE THE FILLING:

STEP 10: Mix together marshmallow creme, cream cheese and lemon juice in a bowl until well combined.

STEP 11: Add powdered sugar 1/2 cup at a time until you get desired sweetness and consistency. I used 2-2.5 cups.

ASSEMBLE THE COOKIES:

STEP 12: Lay half of the cookies out on a cutting board or the counter.

STEP 13: Pipe or spoon a little filing on each cookies.

STEP 14: Top each cookie with another one and press down gently.
