12 DAYS OF CHRISTMAS: BACON JAM

Day 11 is here! I can’t believe we made it this far on our countdown. Today, I am bringing you a food gift that even Clark Griswold would love. It involves bacon and it involves jam. You can’t go wrong here.

Also, you make this one in a slow cooker. So you can throw it in and forget about it while you decorate your tree or wrap those gifts.

Also, it has bacon and that makes everything good.

STEP 1: Cut up bacon into 1″ pieces.

STEP 2: Cook bacon in a large skillet over medium high heat, until bacon is lightly browned or about 20 minutes.

STEP 3: Transfer the bacon to paper towel lined plate to drain.

STEP 4: Chop onion to a small dice. Peel and smash garlic.

STEP 5: Drain off all but about 1 tablespoon of bacon grease and add the chopped onion and smashed garlic.

STEP 6: Cook until the onions are translucent which take about 6 minutes.

STEP 7: Add cider vinegar, brown sugar, maple syrup and coffee. Bring to a boil. Be sure to scrape up any brown bits.

STEP 8: Stir in bacon.

STEP 9: Pour this mixture into a large crockpot. Cook, uncovered, on high for 3 1/2 – 4 hours until liquid has become like syrup.

STEP 10: Transfer the mixture to a food processor and pulse until desired consistency. You don’t want this to be too smooth, but still a little chunky.

STEP 11: Allow to cool and then transfer to a container to refrigerate.

This will remain good for about a month.

Bacon Jam

Ingredients

  • 1 1/2 lbs bacon
  • 2 medium yellow onions
  • 3 garlice cloves
  • 1/2 cup cider vinegar
  • 1/2 cup dark brown sugar
  • 1/4 cup maple syrup
  • 3/4 cup brewed coffee

Instructions
