LEMON ROSEMARY CHEX MIX

Chex Mix is one of those vintage snacks that has been around forever. I had it as a child and seems like such on old school thing to make. But it is just so good it has stood the test of time. Aaannnd is one of my husband’s favorite snacks. He gets bags of it for Christmas sometimes. Of course, the homemade stuff is so much better than the store-bought stuff and it is so easy to make, so why not?? Now because it is one of my husband’s favorite snacks, i have experimented with so many flavors – BBQ, Spicy, Original, Cheesy – but when I came across this Betty Crocker recipe for a Lemon Rosemary Chex Mix I was totally intrigued. What a unique flavor of chex mix? Plus, you make it in the microwave—what? Don’t be snobby. This couldn’t be easier, and it was so tasty, y’all. Even my 2 year old loved it. I hope you enjoy it, too.

Step 1: Melt butter in a large microwavable bowl on high for 40 seconds or until butter is melted.

Step 2: Stir in rosemary, lemon zest, garlic powder and salt until well incorporated.

Step 3. Mix in all the different cereals, almonds and crackers.


Step 4: Microwave on high 5-6 minutes. Stir every 2 minutes.

Step 5: Spread onto a cookie sheet and allow it to cool.

Ingredients

  • 1/4 cup butter
  • 2 tablespoons rosemary minced
  • 1 tablespoon lemon zest
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 2 cups corn chex
  • 2 cups wheat chex
  • 2 cups rice chex
  • 1 cup whole almonds
  • 1 cup parmesan-flavored oyster crackers

Instructions

  1. Melt butter in a large microwavable bowl on high for 40 seconds or until butter is melted.
