I love October. I love when the leaves start to turn red, orange and yellow. I love when there is cool breeze in the air when I leave for work every morning. I love all things pumpkin spice, cinnamon and nutmeg. I love the pumpkins on all the front porches. Most importantly, October ushers in the holiday season and my favorite time to celebrate. Halloween is the first of fun things to celebrate over the next few months. I love all the chic and modern decor you see out there now, as I am not so into the gore part of Halloween, but more so the carved pumpkins, cute kids in costumes and all the candy and treats! I love coming up with fun things to make to represent the less scary parts of Halloween to celebrate the festiveness of the season. Last year I made Ghost Shaped Marshmallows that turned out so cute, I decided to try my hand at pumpkin themed homemade marshmallows this year. They turned out so cute that I wanted to share them with you. These would be great for a Halloween-themed Hot Chocolate Bar or packaged and given out as party favors. So many fun things you can do with these homemade treats.

Ingredients for Jack O'Lantern Marshmallows

Glass Bowls // Cookie Cutter // Gelatin // Food Coloring // Glass Measuring Cup

Recipe:

STEP 1: Prepare a baking sheet pan by spraying with cooking spray or rubbing butter all over it. Cover it with saran wrap. This makes it super easy. to get the marshmallows out. I used a 10×15 pan. I like to use bigger pans when cutting marshmallows into shapes as they tend to show better when the marshmallows are thinner. You can certainly make a thicker marshmallow by using a smaller pan. Set aside.

STEP 2: Pour 1/2 cup water into the bowl of a stand mixer. Sprinkle gelatin over water and allow it to sit.

STEP 3: While the gelatin is “blooming”, combine 1/2 cup water, sugar and corn syrup in a medium sized saucepan.

STEP 4: Heat sugar mixture over medium heat, stirring until it is dissolved.

STEP 5: Clip a candy thermometer to the saucepan and allow the sugar to cook until it reaches 240 degrees (soft-ball stage).

STEP 6: Once mixture reaches 240 degrees, turn your mixer on low and slowly add this mixture to the gelatin.

STEP 7: Add vanilla and food coloring then turn the mixer up to high and mix for 6-7 minutes, or until mixture has doubled and looks like marshmallow.

STEP 8: Quickly pour the marshmallow mixture into the prepared pan.

STEP 9: Let sit out for at least 4 hours or up to overnight.

STEP 10: Using a pumpkin shaped cookie cutter dipped in powdered sugar, cut your marshmallows. Dip the sticky parts of the marshmallow into powdered sugar so they don’t stick together. Set aside.

STEP 11: Use a cake pen to draw the jack o’lantern face on your pumpkin shaped marshmallow.

Jack O'Lantern Halloween Marshmallows

Yield: 12 marshmallows

Ingredients

  • 1 cup water, divided
  • 3 packets unflavored gelatin
  • 1 1/2 cup sugar
  • 1 cup corn syrup
  • 1 teaspoon vanilla
  • orange food coloring
  • 1/2 cup powdered sugar

Instructions

  1. Prepare baking sheet by spraying with cooking spray or rubbing butter all over it and cover with saran wrap. Set aside.
  2. Pour 1/2 cup water into the bowl of a stand mixer. Sprinkle gelatin over water and allow it to sit while you prepare the sugar mixture.
  3. While gelatin is "blooming", combine 1/2 cup water, corn syrup, and sugar in a medium saucepan.
  4. Heat sugar mixture over medium heat, stirring until it is dissolved.
  5. Clip a candy thermometer to the saucepan and allow sugar to cook until it reaches 240 degrees.
  6. Once mixture reaches 240 degrees, turn your mixer on low and slowly add this mixture to the gelatin.
  7. Add vanilla and food coloring then turn the mixer up to high and mix for 6-7 minutes, or until mixture has doubled in size.
  8. Quickly pour the marshmallow mixture into the prepare pan and spread smooth.
  9. Allow to sit, uncovered for at least 4 hours or up to overnight.
  10. Using a pumpkin shaped cookie cutter dipped in powdered sugar, cut out pumpkin shapes from the marshmallow. Dip the sticky parts in powdered sugar to avoid them from sticking together.
  11. Use an edible cake pen to draw the Jack O'Lantern face on the front of the marshmallow.
