Homemade Brown Sugar Cinnamon Pop-Tarts

A Homemade Version of my favorite Pop-Tart Flavor…these Brown Sugar Cinnamon Pop-Tarts bring in all the fall flavors I love.

It’s September, which means I can get out my pumpkins, right? It’s time to start cooking with all my favorite fall flavors. Pumpkin, Sweet Potato, Cinnamon, nutmeg…..I LOVE IT ALL. I will start sharing some great FALL recipes in the next few months as we head into fall. Let’s start today with HOMEMADE Brown Sugar Cinnamon Poptarts. Last year I made Pumpkin Pop Tarts which were amazing! You can see that recipe her. Brown Sugar Cinnamon is my favorite flavor of poptart you can buy in the store, so I knew I wanted to try to recreate these at home.

Eden really wanted to cook in the kitchen with me and these were super fun to have her ‘help’ me. She loved rolling out the dough and mixing all the ingredients.

Ingredients for Brown Sugar Pop-TartsGlass Bowls

Recipe:

STEP 1: Roll out the pre-made pastry dough. Try to shape it into a square if you can. If not, you can always trim off as needed.Rolled Out Pie Crust DoughCutting Board

STEP 2: Cut dough into rectangles. I made mine small (about 2×3).Pie Dough cut Into RectanglesCutting Board

STEP 3: Lay out half of the rectangle squares onto a baking sheet.Dough Rectangles on Cookie SheetGold Jelly Roll Pan

STEP 4: Make the filling by mixing together brown sugar, cinnamon and flour in a small bowl. Set aside.Pop-Tart Filling Mixing Bowl

STEP 5: Make and egg wash by mixing 1 egg with 2 teaspoons of milk. Brush the egg wash over each rectangle.Pie Dough Rectangles with egg wash

STEP 6: Place a heaping teaspoon of filling onto each pastry. Spread it around, leaving a space around the edges. Add a little filling to each as needed.Filing on Pie Dough RectanglesGold Cookie Sheet

STEP 7: Place the other half of the rectangles on top of each prepared rectangle. Press gently around the edges.Assembled Pop-TartsGold Cookie Sheet

STEP 8: Use a toothpick to poke a few holes in the top of each pastry.

STEP 10: Brush each pastry with the egg wash.

STEP 11: Refrigerate the prepared pop tarts for about 1 hour.

STEP 12: Preheat the oven to 350 degrees and bake the pop tarts for 20-25 minutes.

STEP 13: After about 5 minutes on the pan, transfer to a wire rack to cool completely.Baked Pop-tartsCooling Rack

STEP 14: Make the glaze by mixing powdered sugar, milk, cinnamon and vanilla together in a small bowl until smooth.GlazeGlass Measuring Cup

STEP 15: Use a knife or spoon to spread the glaze on the top of each tart.Completed Pop-TartsCooling Rack
