Gingerbread is such a classic holiday flavor that just screams “It’s Christmas Time”! I love making Gingerbread cookies every year. It’s another one of those must-haves every Christmas season. I decided to take a different take on the gingerbread flavor this year and turn that classic spicy flavor into a brunch dish.
Whether you are having Christmas brunch with friends or breakfast on Christmas morning, this is the perfect recipe JUST for that.
These Gingerbread pancakes are super fluffy and have just the right amount of spice. Add whipping cream and dust with cinnamon, dust with powdered sugar or pour on the maple syrup. You cant’t go wrong.

Recipe:
STEP 1: Whisk flour, baking powder, baking soda , salt, cinnamon, ginger, cloves, nutmeg and allspice together in a large bowl.

STEP 2: In a smaller bowl, add buttermilk, molasses, egg, and vanilla and whisk to combine.
STEP 3: Add the wet ingredients to the dry ingredients and fold until just combined.
STEP 4: Heat a griddle or large pan over medium-high heat and spray with cooking spray.
STEP 5: Scoop about 1/4-1/2 cup of batter onto griddle and cook for 2-3 minutes or until edges start to bubble.
STEP 6: Flip pancakes and cook other side for an additional 1-2 minutes. Serve immediately.

Gingerbread Pancakes
Ingredients
- 2 cups all-purpose flour
- 1 1/4 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon cinnamon
- 3/4 teaspoon ginger
- pinch cloves
- pinch nutmeg
- pinch allspice
- 1 1/2 cups buttermilk
- 1/4 cup molasses
- 1 large egg
- 1 teaspoon vanilla
Instructions
