Your New Favorite Pesto Recipe made with Garlic-Infused Oil and a Mix of Pine Nuts & Walnuts!

What does one do when there basil plant is taking over their other herbs in their Urban Garden??? Make pesto, obvs! I think I discovered pesto later in life, maybe 10-15 years ago, but man I am so glad I did. I love fresh basil on a pizza, so why not combine in it with oil, cheese and nuts. I mean, there is nothing about that last sentence that could be bad.

I think I finally have honed in on my favorite pesto recipe and so I am sharing it with you today. Go start trimming those basil plants. Make batches if you have a lot. It freezes well.

Recipe:

STEP 1: Preheat the oven to 350 degrees and line a baking sheet with parchment paper.

STEP 2: Add pine nuts and walnuts to the baking sheet and bake for 5-7 minutes. Let cool.Nuts on a Baking Pan

STEP 5: Turn on the food processor and slowly pour the oil in the top. Pulse until smooth.Pestp in a Food ProcessorCuisinart Food Processor

*Use immediately or store in the freezer. Make sure you add a little oil to the top to prevent the top from turning colors or cover tightly with plastic wrap.

Pesto

Ingredients

  • 1/4 cup pine nuts
  • 1/4 cup walnuts
  • 3/4 cup parmesan cheese grated
  • 2 cloves garlic
  • 6 cups fresh basil leaves
  • 3/4 cup garlic-infused olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
