Sweet Potato Waffles

Adapted from the Baby Foode

Ingredients

  • 1 1/2 cups whole wheat flour
  • 1 cup quick cooking oats
  • 3 tablespoons baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 2 eggs
  • 1 cup milk
  • 1/2 cup whole yogurt
  • 3 tablespoons coconut oil
  • 4 ounces sweet potato puree
  • 2 tablespoons brown sugar

Instructions

  1. Whisk together whole wheat flour, quick oats, baking powder, cinnamon and salt in large bowl.

  2. Whisk together eggs, milk, yogurt, coconut oil, sweet potato puree and brown sugar and add to dry ingredients. Mix until just combined.

  3. Let the mixture stand for 10 minutes while you heat up your waffle maker.

  4. Scoop about 1/4 cup of batter onto your waffle maker and cook according to your waffle makers instructions.

  5. Serve immediately or let cool and freeze.
