Sweet Potato Bacon Skewers

Sweet Potato Skewers

Ingredients

  • 2 lbs sweet potatoes
  • 2 tablespoons olive oil
  • 1 pound bacon
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon red pepper flakes

Instructions

  1. Preheat oven to 375 degrees.

  2. Peel and cut sweet potatoes into small chunks (about 1"). Place into a bowl and toss with olive oil.

  3. Take slab of bacon and cut into 4 equal parts. Set aside.

  4. Take a skewer and slide a sweet potato chunk onto it. Take a piece of bacon and fold it in half and slide on to the skewer. Repeat until you have as many as you want.

  5. Mix together brown sugar, granulated sugar, cinnamon, nutmeg, cloves, cayenne pepper and red pepper flakes and pour into a shallow pan.

  6. Dredge each skewer into the sugar/spice mixture and cover well.

  7. Prepare a pan by covering with foil and place a cooling rack on top. Spray the cooling rack with cooking spray.

  8. Place your prepared skewers onto the prepared pan.

  9. Bake skewers for 30 minutes or until potatoes are fork tender and bacon appears cooked.
