Whip egg whites and water together until foamy.
Add vanilla and stir.
Mix salt, sugar and cinnamon together in a bowl.
Add pecans to the egg white mixture and stir until all pecans are coated.
Transfer the pecans to the cinnamon/sugar mixture with a slotted spoon and mix until pecans are coated.
Spread the nuts out on a cookie sheet lined with parchment paper.
Bake the pecans at 250 degrees for 1 hours, stir. Stir pecans every 15 minutes to prevent clumping.
Transfer to some wax paper to cool.
