Pumpkin Granola

Ingredients

  • 3 cups old-fashioned oats
  • 3/4 cup sliced almonds chopped
  • 3/4 cup raw pumpkin seeds
  • 1/2 cup pumpkin puree
  • 1/2 cup maple syrup
  • 1/3 cup coconut oil melted
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • pinch cloves
  • 3/4 cup dried cranberries

Instructions

  1. Preheat oven to 350 degrees and prepare baking sheet with parchment paper.

  2. In a large bowl, mix together oats, almonds and pumpkin seeds.

  3. In a medium bowl, mix pumpkin puree, maple syrup, coconut oil, vanilla, cinnamon, salt, ginger, nutmeg and cloves together.

  4. Pour the pumpkin mixture over the oat/nut mixture and stir until well blended and oats are completely coated.

  5. Spread oats out onto your prepared pan and bake for 50-60 minutes, stirring ever 20 minutes.

  6. Toss cranberries into baked granola. Let cool completely.
