Pea & Feta Fritters

Ingredients

  • 3 cups frozen peas
  • 3 large eggs
  • 1 1/4 cups self-rising flour
  • 1/4 teaspoon onion powder
  • 1/3 cup feta cheese
  • 2 tablespoons parsley

Instructions

  1. Boil peas for about 4 minutes. Drain.

  2. Add flour, eggs, onion powder and half of the peas to a food processor and pulse until all the ingredients are combined.

  3. Add remaining peas, feta cheese and parsley and fold in gently.

  4. Spray a griddle or pan with oil spray. Drop 1/4 cup of batter onto a griddle and fry for 2 minutes per side.
