Mexican Hot Chocolate

Adapted from Better Homes & Gardens

Ingredients

  • 1 cup unsweetened cocoa
  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 1/2 cup hot water
  • 4 cups half & half
  • 4 cups whole milk
  • 2 cinnamon sticks
  • 1/4 teaspoon chipotle chili pepper
  • 1/3 cup bittersweet chocolate
  • 1/4 teaspoon almond extract

Instructions

  1. Combine cocoa, sugar and salt in a 4 qt. slow cooker. Add 1/2 cup hot water until a paste forms.

  2. Add half & half and milk and whisk until smooth.

  3. Add cinnamon sticks and chipotle chili pepper and stir.

  4. Put the lid on the slow cooker and cook on low heat for 5-6 hours or high for 2-3 hours.

  5. At the end of the time, add chopped bittersweet chocolate and whisk until it is melted and incorporated.

  6. Remove cinnamon stick and stir in almond extract.

  7. Serve immediately or keep in a warm crockpot for a couple of house. Skim the top if needed.
