Preheat the oven to 350 degrees and prepare a baking sheet with parchment paper.
Add walnuts, maple syrup, water, pumpkin puree, salt and 1 tablespoons of pumpkin pie spice in an Instant Pot.
Put the Instant Pot on the Saute setting. Cook for 10 minutesm stirring often.
Lock the lod on the Instant Pot. Cook walnuts on high pressure for 10 minutes. Release the pressure valve and remove the lid.
Spread the walnuts onto the prepared baking sheet.
Bake for 15 minutes, stirring every 5 minutes.
Remove walnuts from oven and transfer to a bowl.
Mix together 1/2 tablespoon pumpkin pie spice and sugar.
Toss warm walnuts with the pumpkin pie spice sugar mixture.
Pour onto wax paper to cool completely.
