Goat Cheese & Sage Biscotti

Ingredients

  • 2 cups all-purpose flour
  • 3 tablespoons fresh sage minced
  • 1 1/2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 2 large eggs
  • 3 1/2 ounces goat cheese softened
  • 1 tablespoon sugar
  • 1/4 teaspoon pepper
  • 1/2 cup olive oil

Instructions

  1. Preheat your oven to 350 degrees and line a baking sheet with parchment paper.

  2. Whisk the flour, sage, baking powder and salt together in a bowl and set aside.

  3. Beat eggs, goat cheese, sugar and pepper in a large bowl until light and fluffy.

  4. Stir in olive oil.

  5. Add the flour mixture and stir until just combined and dough forms.

  6. Separate the dough into shape them into 2 - 10"-12" logs.

  7. Place the logs onto the baking sheets at least 2" apart and bake for about 25 minutes, or until slightly golden.

  8. Let the logs rest and cool a little bit before moving to a cutting board to slice.

  9. Slice the logs on a diagonal into 1/2" slices using a serrated knife.

  10. Place the slices onto the baking sheet, cut side down.

  11. Bake the slices for about 12 minutes or until the edges are brown and firm.

  12. Transfer to a wire rack to cool.
