Adapted from Real Simple
Preheat your oven to 350 degrees and line a baking sheet with parchment paper.
Whisk the flour, sage, baking powder and salt together in a bowl and set aside.
Beat eggs, goat cheese, sugar and pepper in a large bowl until light and fluffy.
Stir in olive oil.
Add the flour mixture and stir until just combined and dough forms.
Separate the dough into shape them into 2 - 10"-12" logs.
Place the logs onto the baking sheets at least 2" apart and bake for about 25 minutes, or until slightly golden.
Let the logs rest and cool a little bit before moving to a cutting board to slice.
Slice the logs on a diagonal into 1/2" slices using a serrated knife.
Place the slices onto the baking sheet, cut side down.
Bake the slices for about 12 minutes or until the edges are brown and firm.
Transfer to a wire rack to cool.
