Donut Topped Cupcakes

Ingredients

Cupcakes:

  • 1 box cake mix any flavor
  • 1 cup whole milk
  • 4 large egg whites
  • 1 cup butter melted
  • 1 tablespoon vanilla
  • 1 teaspoon almond extract

Buttercream:

  • 2 sticks butter room temperature
  • 2-3 tablespoons heavy cream
  • 1 teaspoon vanilla
  • 3-4 cups powdered sugar

Mini Donuts:

  • 1 box cake mix any flavor
  • 1 cup water
  • 1/4 cup vegetable oil

Glaze:

  • 2 cups powdered sugar
  • 1 tablespoon vanilla
  • 1 teaspoon almond extract
  • 1 tablespoon water
  • 3 tablespoons meringue powder
  • 2-3 drops food coloring

Instructions

Cupcakes:

  1. Throw all the ingredients together in a bowl.

  2. Mix until just incorporated.

  3. Divide batter among cupcake liners.

  4. Bake cupcakes at 350 degrees for 15-18 minutes or until toothpick comes out clean.

  5. Allow cupcakes to cool while you prepare icing.

Buttercream:

  1. Mix all ingredients together until smooth.

  2. Pipe onto cooled cupcakes.

Mini Donuts:

  1. Mix together cake mix, vegetable oil, water and egg until just combined.

  2. Pipe mixture into a donut pan and bake at 350 for 8-10 minutes or until toothpick comes out clean.

  3. Allow to cool while you prepare glaze.

Glaze:

  1. Mix together all the ingredients.

  2. Add a few drops of food coloring until you reached your desired color.

  3. Dip the tops of the donuts into the glaze, letting excess drip off, and place on a rack to dry.

  4. Add sprinkles or nuts, if desired.

  5. Place donut on top of the cupcake.
