Cream Cheese Banana Bread

Servings 2 Loaves

Ingredients

  • 3/4 cup butter room temperature
  • 1 8 ounce cream cheese room temperature
  • 2 cups sugar
  • 2 eggs
  • 3 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 medium bananas smashed
  • 1 cup pecans chopped
  • 1/2 teaspoon vanilla

Instructions

  1. Beat butter and cream cheese together until smooth.

  2. Add sugar and beat until light and fluffy.

  3. Add eggs, 1 at a time.

  4. In another bowl, whisk together flour, baking powder, baking soda and salt.

  5. Add flour to butter mixture and beat until just combined.

  6. Fold in bananas, pecans and vanilla.

  7. Pour batter into 2 - 8x4 inch loaf pans.

  8. Bake at 350 degrees for 1 hour or until toothpick comes out clean. Cover bread with foil if it starts to brown too quickly.

  9. Allow bread to cool in pans for 10 minutes, than remove to wire rack to cool completely.
