The cooler temps of fall has me wanting all the comfort foods and drinks. I want anything that will keep me warm and cozy like a good Butternut Squash Soup or a creamy and spicy Mexican Hot Chocolate. A good warm and hearty soup is perfect this time of year and sometimes a soup is the only way I can get any vegetables in my kids. I have to hide them, of course, but a good tomato soup is a great way to do that. Add a grilled cheese, and they basically think they are dipping something in ketchup which they will never turn down.
AND, because I like to celebrate things big with the kids, I wanted to turn the classic combo of tomato soup and grilled cheese into a fun Halloween-themed meal for the kids that only requires a cookie cutter to make it special. See below how you can take a simple dish and make something your kids will think is extra special.

Recipe:
STEP 1: Preheat the oven to 375F and line a baking sheet with foil.
STEP 2: Place tomatoes, onion and garlic head on the baking sheet and drizzle with olive oil, salt and pepper. Toss to cover everything.
STEP 3: Roast the veggies for 35-40 minutes or until they start to blister and onions and garlic look tender and caramelized.
STEP 4: Add tomatoes, onion and garlic cloves to a large dutch oven.
STEP 5: Add chicken broth, bay leaf, and thyme and bring to a simmer over medium-low heat.
STEP 6: Continue to simmer mixture for about 20-25 minutes.
STEP 7: Pour mixture into a blender and mix until smooth. Add more salt & pepper if necessary.
STEP 8: Ladle into serving bowls or dishes and garnish with basil.
STEP 9: While the soup is simmering, prepare grilled cheese bites. Butter a good quality bread and place on a griddle. Add cheese of your choice (I think American cheese makes the best grilled cheese) and grill until done.
STEP 10: Using a bat, pumpkin or ghost cookie cutter, cut your grilled cheese sandwiches into Halloween shapes and serve alongside the tomato soup.

Roasted Tomato Soup with Halloween Grilled Cheese Bites
Ingredients
- 1 1/2 - 2 lbs fresh tomatoes, halved
- 1 sweet onion, peeled & quartered
- 1 head garlic, top cut off
- 1/4 cup extra-virgin olive oil
- salt & pepper
- 3 cups chicken broth
- 1 bay leaf
- 2 sprigs of thyme
- 3 tablespoons fresh basil
Instructions
- Preheat oven to 375F and line a baking sheet with foil.
