I don’t know about you, but when life gets busy and meal plan has gone awry, we make breakfast for dinner. It’s easy to do, we ALWAYS have eggs bacon and some sort of toast/pancake/waffle/bagel situation in our house. Not to mention, it’s easy to throw together really quickly. My kids love pancakes and I will make batches of them and freeze for easy mornings or nights. Pop them in the toaster and they are ready to go. I have tried so many kinds of pancakes over the years to keep things fun like Bananas Foster Pancakes, Gingerbread Pancakes, Orange Ricotta Pancakes and even healthier versions for the kids like Whole Wheat Pancakes. But with being 2020 and all, it getting harder and harder to impress the kiddos. So today I decided to bring in so good ol’ fun with making them colorful. Kids like foods that are their favorite color. Every time we go to the ice cream shop and ask our daughter what flavor she wants…..pink. Always pink (though usually it’s some terrible flavor like Cotton Candy). So today, I made Pink Ombre Pancakes. Kids thinks special things like this is so fun even thought it took so little effort. I love seeing that joy for something so simple.
I also LOVE throwing a good brunch for baby showers, wedding showers, or just a fun morning with my girlfriends. Breakfast/Brunch food is some of easiest and most delicious types of party food there is. I’ve thrown showers with the mini pancakes, or just created a pancake bar. If you are having a themed shower that requires a certain color, these pancakes would be such a hit. make them mini, stick a toothpick through them to hold and align them on a platter. People will be impress and never know how truly easy it is. And, you can literally use any color you want. You could even do chocolate and vanilla and move through lighter chocolate to dark chocolate. SO MANY POSSIBILITIES!

Recipe:
STEP 1: Mix up batter for pancakes according to package instructions (if using a box mix) or your favorite pancake recipe.
STEP 2: Divide batter into 3 bowls.
STEP 3: Add 2-3 drops of food coloring (color of your choice) to the first bowl. Add 6-8 drops to the second bowl. Add 12 drops to the third bowl.

- Food Coloring
Instructions
- Mix up batter for pancakes according to package instructions.
- Divide batter into 3 bowls.
- Add 2-3 drops of food coloring to the 1st bowl. Add 6-8 drops to the 2nd bowl. Add 12 drops to the 3rd bowl.
- Cook pancakes on a griddle according to package directions.
