MEATLESS MONDAY: Sweet & Sour Cauliflower

Sweet & Sour Cauliflower…A healthier & vegetarian take on a Chinese Take-Out classic!

It’s Meatless Monday!! Can we talk about my love of cauliflower for a minute?? I NEVER used to eat it. All I ever saw cauliflower was raw and on a veggie tray. Who wants that?? Not this girl. I love that people realized you could cook it, rice it, puree it…..whatever and make it truly delicious! It can hold up like meat or be pureed to fill a ‘meatball’ (see my vegetarian meatballs here). It is so versatile and my go-to when planning a ‘meatless’ meal.

Can we also talk about my love of Chinese Food! I LIVE for a cheap Chinese buffet or good take-out from that ‘hole-in-the-wall’ restaurant in a strip mall somewhere.  It is one of my favorite things in the whole world. My husband and I have started a tradition of getting tons of Chinese take-out every Christmas Eve. We love it.

Today, I am combining my love a cauliflower and Chinese Food with this Sweet & Sour Cauliflower.

Ingredients for Sweet & Sour CauliflowerGlass Mixing Bowls

Recipe:

STEP 1: Preheat the oven to 425 degrees and line a cooking sheet with foil. Spray foil with cooking spray.

STEP 3: Transfer to a ziplock bag and add cornstarch. Seal the bag and shake to coat all the cauliflower.Cauliflower & Cornstarch in a bag

STEP 4: Pour the cauliflower onto the prepared pan and bake for 15-20 minutes. After baking, turn the dial to broil and broil for 3-4 minutes to get the cauliflower slightly brown.Cauliflower on Greased Pan

STEP 5: Make the sauce while the cauliflower is cooking by adding sugar, apple cider vinegar, soy sauce, garlic powder, onion salt and ketchup to a saucepan.Sweet & Sour SauceGreenpan Saucepan

STEP 6: Heat sauce over medium-high heat and bring to a boil.

STEP 7: Mix corn starch and 2 tablespoons cold water in a small bowl. Add to the boiling sauce and stir until it has thickened a bit.Sweet & Sour Sauce

STEP 8: Reduce heat to low to allow sauce to slightly thicken until cauliflower is ready.

Sweet & Sour Cauliflower

Adapted from Creme De La Crumb

Servings 4

Ingredients

Cauliflower

  • 5 cups cauliflower florets
  • 3 tablespoons vegetable oil
  • 1/3 cup cornstarch

Sweet & Sour Sauce

  • 3/4 cup sugar
  • 1/2 cup apple cider vinegar
  • 2 tablespoons soy sauce
  • 1 teaspoon garlice powder
  • 1/2 teaspoon onion salt
  • 1/4 cup ketchup
  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Preheat the oven to 425 degrees and line a cooking sheet with foil. Spray foil with cooking spray.

  3. Transfer to a ziplock bag and add cornstarch. Seal the bag and shake to coat.

  5. Make the sauce by adding sugar, apple cider vinegar, soy sauce, garlic powder, onion salt and ketchup to a saucepan.

  7. Mix cornstarch and 2 tablespoons cold water in a small bowl. Add to the boiling sauce and stir until it has thickened a bit. Reduce heat to low until cauliflower is ready.

  8. Transfer cooked cauliflower to a large bowl and add sauce. Toss to combine.

  9. Garnish with herbs or green onions.
