I have the most beautiful, sweetest, fiercely opinionated, strong-willed, hilarious little lady in the world. Her favorite foods include mac and cheese, pasta, applesauce, yogurt and, of all things, hummus. She asks for hummus on the daily, which totally makes me laugh. I am not a dip person. Mostly because they contain mayonnaise or sour cream two of which I eat neither. Condiments are not my thing. Well, that is not entirely true. I do like ketchup with fries or on a burger and love a good sauce. But other condiments….No, thank you!
Moving on…Because I am not a big dip person, I am not a huge fan of hummus. I love chickpeas but I would rather eat them whole. I will try a hummus every now and then (side note: The Pesto Hummus from Zoe’s I could do) but Eden lives for it, so I decided to try a recipe special for her since it is her favorite thing. I came across this recipe and thought it would be perfect because it incorporated sweet potatoes, which are really good for her. Yall, she loves this. When I made it, she asked for it every night for a full week. And I don’t feel guilty giving it to her because it’s healthy. Win, win. BTW, there is nothing easier.

STEP 1: Combine chickpeas, sweet potato puree, tahini, olive oil, salt, curry, ginger and lime juice in a bowl of a food processor.
STEP 2: Process until smooth.
STEP 3: Add coconut milk slowly until you reach your desired consistency.
Store in the fridge for up to 1 week.
Sweet Potato Thai Hummus
Adapted from Baby Foode
Ingredients
- 2 cups Chickpeas drained
- 1 cup Sweet Potato puree roasted
- 1/4 cup Tahini
- 1/4 cup olive oil
- 1/2 teaspoon salt
- 1 teaspoon yellow curry powder
- 1/4 teaspoon fresh ginger minced
- juice lime
- 1/4 cup coconut milk
Instructions

Combine chickpeas, sweet potato puree, tahini, olive oil, salt, curry powder, ginger and lime juice in a bowl of a food processor.
