If you read my post from Monday, you will know that my sweet boy refuses to be spoon fed these day. Since that is the case, I can’t hide veggies in a puree anymore. Man, it is so true when they say all kids are different. Eden would (and still does) try and eat ANYTHING! Ezra has been a bit harder to get to eat certain foods…green veggies being one of them. So I searched far and wide to find recipes that hid veggies into thing he could easily pick up himself and chew with his limited teeth.
He had really been loving my whole wheat pancakes in the morning. See that recipe here. So, I came across this recipe for Pea & Feta Fritters, which looked really similar to pancakes, so I thought maybe he would love these, too! We could easily tear these into small pieces hide the veggies. Isn’t it crazy how even a 1 year old learns so early what a vegetable looks like that they don’t even want to try it. These have been working well so far, and you can make a big batch and freeze them, too.

RECIPE:
STEP 1: Boil peas for about 4 minutes. Drain.
STEP 2: Add flour, eggs, onion powder and half of the peas to a food processor and pulse until all the ingredients are combined. Be sure not to over mix.
STEP 3: Add remaining peas, feta cheese and parsley and fold in gently.
STEP 4: Spray a griddle or pan with oil spray. Drop about 1/4 cup of batter onto the griddle or pan and fry for about 2 minutes per side.
Pea & Feta Fritters
Ingredients
- 3 cups frozen peas
- 3 large eggs
- 1 1/4 cups self-rising flour
- 1/4 teaspoon onion powder
- 1/3 cup feta cheese
- 2 tablespoons parsley
Instructions
