Do you find yourself making breakfast for dinner when you don’t have anything else planned for dinner?? Just me? It is so easy make some eggs, toast or bagel, and bacon. Throw on some fruit, because…ya know, healthy. My kids think it’s fun and, to be honest, I love it too. I LOVE breakfast foods. And having it for dinner, just feels kind of special and like you are breaking the rules. We do this at least once a month.
Another breakfast item that is a go-to in my house is pancakes. Who doesn’t love them. One of the best parts is the fact that you can freeze them and pop them in the toaster to defrost and you have them in an instant. I will make batches of healthier versions to keep in the freezer for a quick breakfast for the kids. Check out my recipe for Whole Wheat Pancakes here.
Today I am sharing a recipe that is not actually for the pancakes themselves, but a fun topping to take those pancakes up a notch. I made this a couple of weeks ago for one our family “Breakfast for Dinner” nights and the fam devoured it. I don’t know I am still craving New Orleans food from Mardi Gras or what, but I have thought this Bananas Fosters pancakes would be a great try.

Recipe:
STEP 1: Make pancakes and keep warm in a low temp oven. You can make from scratch, use Bisquik or Kodiak Cakes or whatever you heart desires.
STEP 2: Slice your banana into 1/4-1/2 inch slices. Set aside.
STEP 3: Add butter, brown sugar, cinnamon, nutmeg, maple syrup and rum extract to a large skillet and mix until combined.
STEP 4: Heat the mixture over medium-high heat for 2-3 minutes, stirring constantly until it thickens up a bit and sugar is dissolved.
STEP 5: Turn the heat down to medium and add the sliced bananas. Spoon sauce over the bananas and let them cook for around 3 minutes.
STEP 6: Spoon sauce over pancakes.

This would be a great way to impress brunch guests or even put the sauce and bananas out on a pancake bar for a party.
